We love restaurants for a lot of reasons, but most of all
because they are places to slow down, enjoy each other’s
company and celebrate the beauty of our humanity and the
beauty of the world. It’s easy to feel these days like we are
barreling toward an anti-human future. The idea of a fact-
based, shared reality is fracturing, the climate seems to be
spinning out of control, and AI threatens to make many of
our livelihoods obsolete. Restaurants are a bulwark against
these forces. Mother Sauce will be a magazine about food
and restaurants, and we hope it helps you pay attention to
the interesting, beautiful, and delicious things in life.
This journal is a chance to document what it has been like for
us to run our wood-fired restaurant Annette and our oyster
and cocktail bar Traveling Mercies in Aurora, Colorado over
the last decade; to put down on paper some of the highs,
lows and gory details of this wild ride; and to look under the
hood at the million moving parts that make a restaurant—
and the restaurant industry—what it is.
This will also be a kind of serialized cookbook. We’ll share
recipes—some from our restaurants’ most well-known and
beloved dishes, some that have been a hit at dinner parties
we’ve thrown, and some that have helped us whip up a quick
weeknight meal for our three-year-old daughter Franny.
Finally, one of the best parts of running our restaurants has
simply been getting to do cool shit with our friends, from
guest chef dinners to food and wine festivals to clothing
collaborations. We see Mother Sauce as another bite at
the apple, another chance to make cool and beautiful and
delicious things with people we really like.
